Not complicated at all, injectors are very simple, just take your time and make sure you pay attention to where everything went, and make sure it goes back there.

Some of the cams we have been working with lift the torque figure from as low as 3k by 15+ lb/ft, and then the peak figure by around 5-6 lb/ft. What that gives you is a very quick car with excellent power delivery. No need to chase the limiter to screw every ounce of go from the car.
Lamba sensor won't make a blind bit of difference to a 'tapping' engine.
Sounds suspiciously like oil starvation to me, IIRC your old engine was a gonna due to low oil yes? I would check the dipstick if I was you. DP pulley is also a likely cause.

AFR is measured at the exhaust on these runs, its measurement below 3k can be basically ignored as it does not have the means to take accurate measurements.

Good result, looses seem a little high, 156 ATW would usually equate to nearly 190 ATF (but that's the joy of ATF figures, everyone calculates them differently :dapprove:)
