172FF Rear Disc advise

I'm going to be changing my disc's at the weekend.

When you wind the piston back, how far do you wind it back? all the way until it stops, or just until you can get the new pads and discs?

Also, does anyone have a price and part no. for the hub nut, or should I just re-use the same one thats on the car?

wind it back until you can only just get the pads in as if not the handbrake will be crap
