Software advice - Video capture

Getting a bullet cam at work to record onto a camcorder via AV input.

Anyone recommend a good software to capture high quality stills from video footage?

Bullet cam is 580 frame TV quality effort.

Probably interlaced though.. so your either gonna need to do some de-interlacing or use half size frames. Unless it records progressive frames your not gonna get high quality, more like 354x288 (PAL) or if you deinterlace 720x576 but there are side effects to deinterlacing depending on the method you choose.. BOB is probably the best but it depends on the type of video.
