Mileage isnt the issue Id say, as they mainly seem to get the problems from about 60-80k miles. But then again, people always sell their car for a reason...

There are loads of Valvers and Willys with over 100k on the clock. Mine hit 100k a few weeks ago and runs as sweet as a nut and is in totally mint condition. Big bills time is from 60 to 80k.
The best VFM mod Ive done is a de-cat. I dont know how much bhp etc it adds and Im not that concerned with that really, because on the F7P/R engines this mod will allow you to spit flames/plooms of black soot when youre ragging it. £45 well spent.

There is no 180bhp S3 - only the original 210bhp variant and the later 225bhp version. There is, however, a regualar A3 1.8T (150bhp) and the 1.8T Quattro (180bhp).

No problem with 195 profile tyres. Dont see it being too bad with 205s - I know a few people with them on and theyre fine.
195 rubber is a lot cheaper though (in 15" size anyway)
