have you got a Haynes manual, as that describes dash/console removal (although you shouldn't need to remove the centre console)

the right hand clamp is called an olive clamp and is not what you need for the joint in the picture.
for the pictured joint, you could either use a mikalor/norma type clamp (basically a fancy jubille clip), or a u-bolt clamp of the right size. u-bolt clamps will be available from kwikfit/etc...
just wondering, as it may help - what sort of stuff have you experience of driving on track and have you a trailer and tow vehicle?

assume it's the same with the key out of the ignition? i've not had the Clio's ignition barrel out, but there's usually a pin/bar in them that locks the steering - if that's the case with the Clio, could be that it's jammed/broken off

no way you'll get £1k for that list of parts i'd say - apart from bumpers and wheels (probably not worth much more than a few hundred?), the rest is just little bits

the bonnet release lever just pulls off (from experience)
not sure about the plastics - have a look in Haynes if you've got one, as the interior trim is described in there. fairly sure i had the panel behind the bonnet release lever off and that it just pulled off (hook-type clip at the top?)...
