as mike said, relays would be the best place to start. Also have a look to see if the fuel pump is recieving enough power. The relays you're looking for are square. (there are 4 of them in the box)

75w80 or 75w90 synthetic are the usual.

the level or the oil? Level check, all you do is remove the wing nut on the front of the box when the car is on the flat. The oil should be up to the bottom of the fill hole.

depends how much trashing you give the car. Track days cars it would be worth changing more often. Every 2 years I do now, depending on how many track days I've done. It's cheap to do, and quick, so why not? Especially as the JC5 does like to fall to bits ;)

Yeah not a fan of the bumper holes. what did you manage to skim off the bumper to make it ligter? Presumably the bottom piece that goes under the car?
